VEGETARIAN KONKANI CURRY

Ingredients

  • 1tbsp mustard oil
  • 15 - 20 lady finger
  • 1 cucumber
  • 3 - 4 dry red chillies
  • 2 tsp turmeric powder
  • Salt to taste
  • 6 tbsp corn kernels
  • ½ cup boiled and chopped ridge gourd
  • 3 - 4 soaked garcinia lndica 
  • 3tbsp green chilli paste
  • 7 - 8 tbsp fresh coconut paste
  • 1 ¼ cup cooked red gram
For garnish
  • Already prepared tempering

METHOD

  • Heat oil in a pan.
  • Mix dry red chilli, chopped lady finger and unpeeled cucumber in it.
  • Now add turmeric powder, salt and corn kernels in it to cook.
  • After corn kernels are slightly cooked add ridge gourd , chopped garcinia indica and its water in the pan to cook for 4 mins - 5 mins.
  • Now add green chilli paste, coconut paste and water in it to cook for 2 mins - 4 mins.
  • Next, add cooked red gram in it and cook.
  • Garnish the prepared vegetarian konkani curry with the already prepared tempering.
  • Your Vegetarian Konkani Curry is ready.

Ingredients

  • Ready idlies
For burger
  • 100gms boiled soya nuggets 
  • 1 onion chopped
  • 3 to 4 garlic flakes chopped
  • Salt

  • Ketchup and lettuce leaf
  • Green chutney

Method

For soya nuggets patty
  • Coarsely grind soya nuggets in a mixer.
  • In a pan heat oil. Add onion, garlic sauté well.
  • Add chopped soya nuggets and sauté
  • Add salt, pepper and chopped coriander and sauté.let it cool.
  • Cut the idli in to two pieces
  • Make small patty of soya nugget mixture and slowly cook on hot plate.
  • Add Lettuce Leaf on one part of idli and chutney on the other part
  • Add soya patty on lettuce leaf and cover it with the other part.
  • Put one tooth pick and serve it.

To get the maximum juice out of a lemon or a lime, roll it hard on the kitchen counter using your palm. This releases more of the juice.

It better to wipe or brush mushrooms clean of any dirt. They absorb water easily, and washing them under a running tap or leaving them soaked will make them taste watery.

Rubbing your hands on a stainless steel sink or container removes the pungent smell of garlic, onions or other spices from them.

To help tough meat like lamb or beef tenderize, marinate it in vinegar, curd, mustard or mashed papaya overnight. Wipe off the marinade and then cook.




When cooking vegetables don't add salt until the very end. Adding salt early can dehydrate vegetables and reduce their nutritional value.

Slicing cheesecake and other cold desserts is tricky. If you want to make clean slices soak your knife in warm water for a few minutes, then wipe it dry and use to make a clean slice.



To prevent pieces of cut apple or pear from turning black, squeeze a little lime juice on them or sprinkle a little bit of crushed mustard.





When boiling potatoes add a pinch of salt to the water. This loosens the potato peal and makes peeling boiled potatoes a lot easer.





Before cooking cauliflower keep in soaking in water mixed with a teaspoon of vinegar for about fifteen minutes. This not only loosens the dirt and grit but also kills any insects that may be lodged between the florets.

  • Add 1 Tbsp of hot oil to the dough for making Kachories or Kulchas.
  • Always use heavy bottomed vessels to make desserts, in order to avoid burning.
  • Make desserts with full cream milk, to get thick creamy texture.
  • Whenever curd is to be added to the masala, it should be beaten well and add gradually.
  • Chop some extra vegetables, for next day stir fry.
  • Use the leftover dal water to make rasam or sambar.
  • Never discard water in which vegetables are cooked, use it in gravies, soups, rasam or kolumbu.
  • Onions and masala are fried in the cooker body itself, raw vegetables are added to that with enough salt and water. Cook under pressure according to the cooking time of the vegetable. This method helps us minimise our cooking time, use of utensils and nutrients are also preserved.
  • If poppy seeds are used in grinding, soak it in hot water for 10 to 15 minutes, if you are grinding it in a mixie.
  • While boiling milk, always add a little water at the base of the vessel to avoid the milk from sticking at the bottom.
  • Add a tsp. of hot oil to homemade pastes of garlic, ginger or green chili, along with salt to make it last longer and taste fresher.
  • Store raisins in an airtight container in the refrigerator. They will stay fresh for much longer. Pour very hot water over them if they had harden, after that drain them immediately, and spread on a paper towel to dry. You can also leave a spoon in the vessel in which the milk is being boiled at low heat so that it does not get burnt at the bottom
  • Add a few drops of lemon a tsp of oil to rice before boiling to separate each grain.
  • Never discard the water in which vegetables are cooked, use it in gravies or soups.
  • Put tomatoes in a large bowl and cover with boiling water Leave it for about 5 minutes. Take out one by one, piercing them with a sharp knife, the skin will peel off easily.
  • Immediately after boiling noodles put them in normal cold water to separate them each.
  • If you forget to soak chana/Rajma overnight. Just soak the chana/Rajma in the boiling water for an hour before cooking.
  • Curd in winter - Set in a ceramic container and place it on the voltage stabilizer of your refrigerator.
  • Potatoes soaked in salt water for 20 minutes will bake more rapidly.
  • Roasting is a dry heat method of cooking - it does not use water. The flavors roasting draws forth result from the process of browning. As the surface of the meat browns, and its juices and fats drip down and brown on the surface of the hot roasting pan, it adds to the flavour of the meat.

Tips For Gravies:

  • Always use ghee or vanaspathi with or instead of oil, which gives a good flavour to the gravy. If oil alone is used, it does not get separated easily from the ground mixture, as ghee separates from it.
  • Fry the ground masala in reduced flame, so that it retains its colour and taste.
  • Little plain sugar or caramelised sugar added to the gravy makes it tasty.
  • When tomatoes are not in season, tomato ketchup or sauce can be successfully used in the gravies.
  • To retain colour in the gravy always use ripe red tomatoes. Discard green portions if any.
  • Good variety chillies and chilli powder also gives colour to the gravy. As far as pos sible try to use long variety red chillies. Dry it under sun for few days and powder coarsely at home. Always the coarse powder gives good taste in gravies and pickles.
  • While using ginger and garlic paste in curries, always use garlic at 60% ratio and ginger at 40% as ginger is very strong and may make your dish sharp and pungent.

After 2-3 days, you should wrap the bread well, put it in a freezer bag and freeze it.  Never store any bread in the refrigerator, because the cold temperature (38º-40º) accelerates the crystallization of the starches, causing the bread to stale much faster. When I bake a bread, as soon as it cools completely, I cut it, freeze half immediately and keep the other half cut-side down on a cutting board covered with a clean cloth. When that’s consumed, I take out the frozen half, defrost it at room temperature or wrap it in foil and bake in a 450º oven for 10 minutes and it tastes just as good as the day it was baked.

Before you head outside to start cooking, brush up on these grilling tips you may not know.

1. Know your heat source. There are two types of heat sources to use when grilling: direct or indirect heat. Foods grilled over “direct heat” — when the heat source of lit burners or hot coals sits directly beneath the food — are typically fast-cooking foods like steak or asparagus. Foods grilled over “indirect heat” — when the heat source comes from off to the side of the food, whether it’s by turning off burners or banking hot coals to the other side — are slow-cooking foods like potatoes or brisket. Foods can be started over direct heat to develop a nicely charred exterior before being finished over indirect heat to ensure that the center is cooked through without burning the exterior.

2. Oil the grates with a brush to keep foods from sticking.
For fragile items like fish, brush both the grates and the food for extra nonstick insurance.

3. Leave the food alone until it lifts easily from the grill.
The easiest way to tell if it’s time to turn your food is by gently lifting it at one end — if it lifts easily, it’s done. If it sticks, leave it for a few more minutes before checking once more. A good rule of thumb to follow is to leave food to grill undisturbed on one side for a minute or two to allow grill marks to form.

4. Go beyond burgers.
Experiment with sweet foods like fruit (peaches and pineapples are ideal contenders; pat the surface dry, brush with olive oil and season with sugar or salt), pound cake or angel food cake. The sugars in sweets will caramelize for great grill marks.

5. Flare-ups are caused by drippings.
The shooting flames that erupt when grilling are typically the result of drippings catching on fire and burning off. The first step is to safely move the food out of the line of fire using tongs; this should remove the source of the drippings fueling the fire. If the flames don’t die down almost immediately, starve the flames of oxygen by covering the grill — the flare-up should then cease. Only as a last resort should the grill be doused with water or flour, as both will ruin the food.

Science Finds Ancient Spice Turmeric As Effective As 14 Drugs
Turmeric is one the most thoroughly researched plants in existence today.  Its medicinal properties and components (primarily curcumin) have been the subject of over 5600 peer-reviewed and published biomedical studies.  In fact, our five-year long research project on this sacred plant has revealed over 600 potential preventive and therapeutic applications, as well as 175 distinct beneficial physiological effects. Given the sheer density of research performed on this remarkable spice, it is no wonder that a growing number of studies have concluded that it compares favorably to a variety of conventional medications, including:
  • Lipitor/Atorvastatin(cholesterol medication): A 2008 study published in the journal Drugs in R & D found that a standardized preparation of curcuminoids from Turmeric compared favorably to the drug atorvastatin (trade name Lipitor) on endothelial dysfunction, the underlying pathology of the blood vessels that drives atherosclerosis, in association with reductions in inflammation and oxidative stress in type 2 diabetic patients.   • Prozac/Fluoxetine & Imipramine  (antidepressants): A 2011 study published in the journal Acta Poloniae Pharmaceutica found that curcumin compared favorably to both drugs in reducing depressive behavior in an animal model.[v] [for additional curcumin and depression research – 5 abstracts]
  • Aspirin (blood thinner): A 1986 in vitro and ex vivo study published in the journal Arzneimittelforschung found that curcumin has anti-platelet and prostacyclin modulating effects compared to aspirin, indicating it may have value in patients prone to vascular thrombosis and requiring anti-arthritis therapy.[vi]  [for additional curcumin and anti-platelet research]
  • Anti-inflammatory Drugs: A 2004 study published in the journal Oncogene found that curcumin (as well as resveratrol) were effective alternatives to the drugs aspirin, ibuprofen, sulindac, phenylbutazone, naproxen, indomethacin, diclofenac, dexamethasone, celecoxib, and tamoxifen in exerting anti-inflammatory and anti-proliferative activity against tumor cells.[vii] [for additional curcumin and anti-proliferative research – 15 abstracts]
  • Oxaliplatin (chemotherapy drug): A 2007 study published in the International Journal of Cancer found that curcumin compares favorably with oxaliplatin as an antiproliferative agenet in colorectal cell lines.[viii] [for additional curcumin and colorectal cancer research – 52 abstracts]
  • Metformin (diabetes drug): A 2009 study published in the journal Biochemitry and Biophysical Research Community explored how curcumin might be valuable in treating diabetes, finding that it activates AMPK (which increases glucose uptake) and suppresses gluconeogenic gene expression  (which suppresses glucose production in the liver) in hepatoma cells. Interestingly, they found curcumin to be 500 times to 100,000 times (in the form known as tetrahydrocurcuminoids(THC)) more potent than metformin in activating AMPK and its downstream target acetyl-CoA carboxylase (ACC). Another way in which turmeric and its components reveal their remarkable therapeutic properties is in research on drug resistant- and multi-drug resistant cancers.  We have two sections on our site dedicated to researching natural and integrative therapies on these topics, and while there are dozens of substances with demonstrable efficacy against these chemotherapy- and radiation-resistant cancers, curcumin tops both lists:

Kids vitamins are supposed to be healthy, right? Well then, what's going on with Flintstones Vitamins, which proudly claims to be "Pediatricians' #1 Choice"?  Produced by the global pharmaceutical corporation Bayer, this wildly successful brand features a shocking list of unhealthy ingredients, including:

82% of kids aren't eating all of their veggies1. Without enough vegetables, kids may not be getting all of the nutrients they need.

The implication? That Flintstones vitamins somehow fill this nutritional void. But let's look a little closer at some of these presumably healthy ingredients....
ASPARTAME
Aspartame is a synthetic combination of the amino acids aspartic acid and l-phenylalanine, and is known to convert into highly toxic methanol and formaldehyde in the body.  Aspartame has been linked to over 40 adverse health effects in the biomedical literature, and has been shown to exhibit both neurotoxicity and carcinogenicity [1]  What business does a chemical like this have doing in a children's vitamin, especially when non-toxic, non-synthetic non-nutritive sweeteners like stevia already exist?
CUPRIC OXIDE
Next, let's look closer at Cupric Oxide, 2mg of which is included in each serving of Flinstone's Complete chewable vitamins as a presumably  'nutritional' source of 'copper,' supplying "100% of the Daily Value  (Ages 4+), according to Flintstones Vitamins Web site's Nutritional Info.[2]
But what is Cupric Oxide? A nutrient or a chemical?
According to the European Union's Dangerous Substance Directive, one of the main EU laws concerning chemical safety, Cupric Oxide is listed as a Hazardous substance, classified as both  "Harmful (XN)" and "Dangerous for the environment" (N).  Consider that it has industrial applications as a pigment in ceramics, and as a chemical in the production of rayon fabric and dry cell batteries. In may be technically correct to call it a mineral, but should it be listed as a nutrient in a children's vitamin? We think not.

COAL TAR ARTIFICIAL COLORING AGENTS
A well-known side effect of using synthetic dyes is attention-deficit hyperactivity disorder. For direct access to study abstracts on this topic view our Food Coloring research page.  There is also indication that the neurotoxicity of artificial food coloring agents increase when combined with aspartame,[3] making the combination of ingredients in Flintstones even more concerning.
ZINC OXIDE
Each serving of Flinstones Complete Chewable vitamins contain 12 mg of zinc oxide, which the manufacturer claims delivers 75% of the Daily Value to children 2  & 3 years of age.  Widely used as a sun protection factor (SPF) in sunscreens, The EU's Dangerous Substance Directive classifies it as an environmental Hazard, "Dangerous for the environment (N)."  How it can be dangerous to the environment, but not for humans ingesting it, escapes me.  One thing is for sure, if one is to ingest supplemental zinc, or market it for use by children, it makes much more sense using a form that is organically bound (i.e. 'chelated') to an amino acid like glycine, as it will be more bioavailable and less toxic.
SORBITOL
Sorbitol is a synthetic sugar substitute which is classified as a sugar alcohol. It can be argued that it has no place in the human diet, much less in a child's. The ingestion of higher amounts have been linked to gastrointestinal disturbances from abdominal pain to more serious conditions such as irritable bowel syndrome.[4]
FERROUS FUMARATE
The one clear warning on the Flinstone's Web site concerns this chemical. While it is impossible to die from consuming iron from food, e.g. spinach, ferrous fumarate is an industrial mineral and not found in nature as food. In fact, ferrous fumarate is so toxic that accidental overdose of products containing this form is "a leading cause of fatal poisoning in children under 6." The manufacturer further warns:
Keep this product out of reach of children. In case of accidental overdose, call a doctor or poison control center immediately.
HYDROGENATED SOYBEAN OIL
Finding hydrogenated oil in anything marketed to children is absolutely unacceptable. These semi-synthetic fatty acids incorporate into our tissues and have been linked to over a dozen adverse health effects, from coronary artery disease to cancer, violent behavior to fatty liver disease.[5]
GMO CORN STARCH
While it can be argued that the amount of GMO corn starch in this product is negligible, even irrelevant, we disagree. It is important to hold accountable brands that refuse to label their products honestly, especially when they contain ingredients that have been produced through genetic modification. The 'vitamin C' listed as ascorbic acid in Flintstones is likely also produced from GMO corn. Let's remember that Bayer's Ag-biotech division, Bayer CropScience, poured $381,600 of cash into defeating the proposition 37 GMO labeling bill in California. Parents have a right to protect their children against the well-known dangers of genetically modified foods and the agrichemicals that contaminate them, don't they? GMO corn starch is GMO, plain and simple. We'd appreciate it if Bayer would label their "vitamins" accordingly.
In summary, Bayer's Flintstone's vitamin brand is far from a natural product, and the consumer should be aware of the unintended, adverse health effects that may occur as a result of using it.
